What is Diabetes

The fuel that keeps our bodies running is glucose (sugar). After we eat, glucose pours into the bloodstream and is carried to individual cells throughout the body. Before glucose can enter the cells, it requires the presence of a hormone called insulin.

Insulin is produced by the pancreas to control the amount of glucose in the blood. In people who have diabetes, the pancreas does not produce any or enough insulin, or the insulin they produce doesn�t work efficiently.

As a result, glucose builds up in the bloodstream, potentially leading to health problems such as blindness, heart disease, kidney problems, gangrene build-up possibly leading to amputation, nerve damage and erectile dysfunction.

Beans
Beans are rich in complex carbohydrates and high in soluble fiber. Studies have shown that a diet high in soluble fiber causes the body to produce more insulin receptor sites. Thus more insulin could get into the individual cells rather than staying in the bloodstream.

Buckwheat
Buckwheat is absorbed more slowly than other grains. It helps to control the body�s blood sugar levels of which diabetics must be mindful.

Parsnips
Parsnips are an excellent source of dietary fiber. Researchers have found that fiber can control the blood sugar swings that occur with diabetes.

Pectin
Pectin helps to slow the absorption of sugars and nutrients into the bloodstream. As a result, it prevents the sudden surges of glucose that can damage the nerves, eyes, and vital organs.
